How do i prepare potatoes to freeze?!


Question: How do i prepare potatoes to freeze?
I bought 10 lbs of potatoes and don't to waste them so I want to make fries to freeze. My question is do i need to fry them before i freeze them or can i boil them or can i just leave them raw. When i go to fix them i would like to be able to bake them instead of frying them. Any other ideas for freezing potatoes is also appreciated. Thank you!

I have been doing this forever..I like to buy and freeze...Cut the potatoes into medium French fry shapes. Cook in simmering, salted water until half cooked. Drain thoroughly and place in a single layer on a sheet pan. Freeze until solid, then transfer to bags... When you're ready to cook, toss potatoes with 2 tbsp. of oil, place in a single layer on a sheet pan and bake at 425 degrees until nicely browned (about 15 to 20 minutes). Keep an eye on them, turning occasionally. Salt immediately when done....

Pre-fry them until done about half way, drain them, spread on a cookie sheet or something like it and let cool completely. Bag 'em up and stick 'em in the freezer. When you're ready for some home made fries, take out the desired amount, put them on the cookie sheet in a 350 degree (F) preheated oven, cook until done, about 15 - 25 minutes. Check on them a couple of times to see if they're done. You have to check unless you are absolutely certain just how much you cooked them previously. Obviously, if you cook them less initially, you'll have to cook them a little longer afterwards. Simple.

For just about any recipe that calls for potatoes, use them fresh if possible. Not all potatoes are the same, some freeze with a grainy texture afterwards, some are best if cooked into a recipe and the whole recipe frozen, especially liquid type things like soup.

Potatoes will keep for several months in a cool, dark place. To freeze them , cut them into pieces, boil for 2 minutes then plunge into cold water to stop the cooking. Freeze on a tray (open freeze) then put into zip lock bags. Mashed potatoes also freeze well.



Blanch them so they don't turn brown when you freeze them.
