Shrimp scampi

If you want to serve shrimp scampi on pasta, prepare the pasta by bringing a large pot of water to the boil. Season the boiling water with a handful of kosher salt and then add the pasta. Give everything a big stir and cook, stirring occasionally, until the pasta is as tender as you want it.

Ingredients

For the shrimp scampi:
4 tablespoons unsalted butter
1/4 cup extra virgin olive oil
2 pounds peeled shrimp, largest you can afford
2 cloves garlic, finely chopped
juice of 1 lemon
coarse sea salt
fresh chopped parsley
2 slices best-squality white bread, crusts removed and processed to bread crumbs

Method
Heat the butter and olive oil together in a sauté pan.

When the foam from the butter subsides, add the shrimp and garlic at the same time, cooking until the shrimp just turn opaque, about 3 minutes.

Remove from heat, add the lemon juice and salt to taste; toss, sprinkle with parsely and breadcrumbs.

Serve on pasta if desired



1 cup white wine
1/2 cup unsalted butter. (do not use margarine)
3 teaspoons minced garlic
parsley and lemon slices or wedges (for garnish) - optional
1 pound shrimp, peeled and deveined

1.Preheat oven to 350 degrees, farenheit.
2.Combine all ingredients in a medium casserole dish.
3.Bake, uncovered for 6 to 7 minutes, until shrimp is pink. Do NOT overcook!
4.Serve alongside a nice steak, an accompanying seafood entree, or alone with your favorite side dishes.

If you want it with pasta, then cook pasta according to package directions and serve the shrimp scampi over the cooked pasta.

Shrimp Scampi

4 tsp olive oil

1 1/4 pounds med shrimp, peeled (tails left on) and deveined

6-8 garlic cloves, minced

1/2 cup low sodium chicken broth

1/2 cup dry white wine

1/4 cup fresh lemon juice

1/4 cup + 1 T minced parsley

1/4 tsp salt

1/4 tsp freshly ground pepper

4 lemon slices

In a large nonstick skillet, heat the oil. Saute the shrimp until just pink, 2-3 min. Add the garlic and cook stirring constantly, about 30 seconds. With a slotted spoon transfer the shrimp to a platter, keep hot.

In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, the salt and pepper; bring to a boil. Boil, uncovered, until the sauce is reduced by half; spoon over the shrimp. Serve garnished with the lemon slices and sprinkled with the remaining tablespoon of parsley.

Ladle over angel hair Pasta (thin spaghetti)

put your oil and butter in a pan heated to medium. Once the butter stops sputtering, add your shrimp and cook about 2-4 minutes (depends on the size of your shrimp) on one side. Flip them over, add your garlic salt and pepper, finish the shrimp for another 2-4 minutes or so - Stir - then add your parsley and lemon and that's it.
