Sausage Soup!

1 lb of hot italian sausage (not links)
2 small to medium zucchini
1/2 of large onion
3 large carrots peeled/chopped
3 stocks of celery - chopped
2-3 handfuls of spinach
1 can of tomatoes - diced
1 can of white beans
1 large box of chicken broth and 1 can of chicken broth
1 - 2 tbs of chopped garlic
Olive oil

Brown sausage over medium high heat with garlic and a tbs of olive oil. Add all vegetables (except spinach) to the sausage about half way through cooking the sausage. Continually mix to all meat and vegetables cook evenly (between 7 and 11 minutes).

Add canned tomatoes beans and chicken broth, heat to a boil.

Let simmer for 15-20 mins.

You can add pasta to this soup or eat it without the pasta. Either way, it is a healthy, delicious, and very filling meal that is perfect for leftovers!

We're snowed in. I'm making this recipe for the 5-6th time. It's called chili, but it's not a chili at all- it's super easy and very good

The Ingredients.
--16 oz bag of frozen white corn
--2 cans of White Beans
--4 oz can of green chilies
--1/2 chopped white onion
--2 minced cloves garlic
--1 cup vegetable broth
--juice from one lemon
--1 1/2 teaspoons cumin
--1/2 teaspoon Italian seasoning
--salt and pepper to taste
--mozzarella cheese (optional)

The Directions.
--dump everything into crockpot.

seriously---you need to chop the veggies, but the rest of the stuff can just go in. You don't need to drain and rinse the beans, or drain the chilies.

cook on low for 8-9 hours, or high for 4-6.

serve with shredded mozzarella cheese (optional)



Mustard and worcestershire marinaded pork loin, olive oil roasted red and purple potatoes, stewed okra and tomatoes, salad.



Roasted boneless pork loin, rice and gravy, candied yams, smothered okra and tomatoes and cornbread. Peach cobbler for dessert.

Tonight its gonna be bratwurst, homemade potato salad, Bush's baked beans, coffee & chocolate covered donuts for dessert.



Grilled shrimp with home made pomodoro sauce, linguini fini, garlic/mozzarella bread baked and salad with Italian dressing

Ice cream with crumbled cookies on top, chocoloate syrup to finish it off



Aubergine and Courgette Parmigiana with a salad



Roast chicken with homemade gravy
