White sauce

Also called Bechamel, one of the 5 Mother sauces

Ingredients
4 tablespoons butter
4 tablespoons flour
4 cups whole milk
2 teaspoons kosher salt
1/2 teaspoon freshly grated nutmeg

Directions
In a medium saucepan, heat the butter over medium-low heat until melted. Whisk in the flour then switch to a spoon and cook, stirring frequently until the butter and flour are combined and begins to take on color.

Slowly pour in the milk, whisking constantly. Add the salt and nutmeg. Stir continuously, taking care to scrape around the bottom and bottom edge of the pan. Continue stirring until the mixture begins to thicken.

Proceed with recipe as directed.



Bechamel or White Sauce recipe

Ingredients
5 tablespoons butter
4 tablespoons all-purpose flour
4 cups milk
2 teaspoons salt
1/2 teaspoon freshly grated nutmeg

Directions
In a medium saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color, about 6 to 7 minutes.

Once your butter & flour is smooth, add milk, salt & nutmeg. Stir slowly until sauce thickens, about 5 to 7 munutes

This will yield about 3 cups of white sauce.



If you are ok with milk and butter, its just a rue sauce.

Knob of butter ( or marge ) spoon of flour, cook gently stirring all the time, add milk, then cheese
