chocolate mousse and chocolate pudding?!


Question: Chocolate mousse and chocolate pudding?
what is the difference? i found a recipe for a chocolate mousse and thought I would try fixing some parfaits for my boys and my husband as our dessert for Valentines day, my boys are very small and it looked like something they would enjoy. But it got me to wondering what the difference is between a mousse and a pudding?

Hi Lisa,

There's not a whole lot of difference. The mousse usually gets whipped cream folded in.
I make my chocolate pudding (homemade) then I make my whipped cream by adding Grand Manier
(orange flavored liqueur) and cover it so the film doesn't form. Basically it's pudding with whip cream!
Here's a really healthy recipe I used to make for the kids when they were little ( I make them the adult mousse now :)

Healthy chocolate pudding for kids ( great for vegetarian or lactose intolerant)
* 1 tablespoon whole wheat pastry flour or all purpose flour
* 2 cups chocolate soy milk, divided
* 2 eggs
* 1 tablespoon granulated sugar
* 1 teaspoon vanilla extract
Directions
1. In a large bowl, stir flour with 2 tablespoons soy milk until flour is dissolved. Whisk in eggs, sugar and vanilla. Set aside.
2. Pour remaining soy milk into a medium saucepan over medium heat. Bring milk to a simmer, stirring occasionally. Gradually add hot milk to bowl, whisking constantly.
3. Reduce heat to low and pour contents of bowl back into the saucepan. Whisk mixture until it has thickened and coats the back of a spoon, about 8 minutes.
4. Remove from heat and transfer mixture to a clean bowl. Let cool, stirring occasionally. Serve warm or cover with a sheet of plastic and refrigerate until cold. If you should make it this way, try adding a touch of instant coffee and liqueur for the adults. Let me know how it turned out for you...

Mousse usually uses eggs as a binding/thickening agent, while puddings use starch (corn or flour) as the binding/thickening agent.

The biggest difference will be texture. Mousse is lighter, fluffier. Pudding is denser.

You can make a 'fake' mousse by adding a couple of cups of whipped topping (like CoolWhip) to a package of instant pudding.
