Question: Packed lunches for the office - suggestions?
Hi. Getting a bit fed up of cheese sandwiches and pasta in sauce. Can you suggest anything nice but cheap to make?

I have access to a fridge and hot water, but no microwave at work.

I don't blame you for getting fed up with cheese sandwiches! Here are some ideas you might enjoy:

1. Tortilla rollups: flour tortilla spread with herb and garlic cream cheese, top with sliced smoked turkey, roasted red peppers, lettuce and sliced cucumbers.
2. Whole grain bread topped with mayonaise, mustard, and slices of roast beef, sliced green chili's, and jack cheese. Add some lettuce and tomato.
3. Pita shells filled with hummus, cucumbers, tomatos, lettuce and feta cheese.
4. Fresh veges and soft cheese to dip in.
5. Cottage cheese and fresh fruit, whole grain crackers, carrot and celery stix.
6. Salad greens, sliced ham, american cheese, hard cooked eggs, tomatos, olives, ranch dressing for a Chef salad
7. Thermos filled with tomato soup, ham and cheese sandwich
8. Cold fried or roasted chicken, potato salad, apple
9. Greek yogurt with vanilla and honey, graham crackers, apple slices
10. Pasta salad with ham and cheddar cheese, peas, chopped green onions, whole grain rolls
11. Tuna salad with raisins, carrots and whole grain crackers
12. Top ramen with add-ins: sliced leftover pork roast,, chicken, veges etc.
13. Stuffed tomatos: tuna or chicken salad, rolls

How about packing a bento box? I, too, was tired of the same old things. I still make sandwiches sometimes, but I also like the creativity of the bento. The small little containers make using up leftovers a breeze. I invested in a few "hot packs" from pyrex and my bento has an insulted carrier. I add a bit of rice or pasta, a protein and some veggies and I am all set.

Here are a few of my husband's recent bentos (I rarely eat meat so mine are vegetarian):

Hot bento:
leftover shredded chicken with adobe seasoning
leftover Spanish rice
homemade roasted pepper strips
grapes

Cold bento:
diced turkey (deli)
cheese chunks
wheat crackers
carrot sticks & ranch dressing


There are a number of wonderful bento websites and the equipment can be as simple as a number of small rubbermaid containers or you can purchase a bento system (ranging from 15 - 50 dollars). I actually find that I make more than we need for dinner, then I have everything I need for lunch for a few days.
