If you are choosing to use less than one egg...you have a few options.
1. You can purchase a carton of small eggs so when your recipe requires 1/2 an egg; just use 1 small egg.
2. You can take an egg and mix the yolk and white together then use only 1/2 of the egg (2 Tbs.) You could then either just throw the extra egg away, freeze it for later use, cook in microwave and eat it.
3. You can usually substitute 1/2 and egg with 2 Tbs. of mayonnaise.....or 1/4 egg + 1 Tbs. mayo.
4. If it is only a small portion of the egg you need: e.g. 1/4 or less. Just leave the egg out of the recipe.
