Macaroni cheese has gone all weird?!


Question: Macaroni cheese has gone all weird?
I made some yesterday and had leftovers so I kept it in the fridge and heated it up today for dinner. However, the cheese sauce has gone all hard and isn't really a liquid sauce, more like a thick stodgy mush that is holding everything together. Why could this be? Could too much flour or cheese cause this?

Answers:

That is just what haoppens when you have a roux base and it sets.

Add a splash of milk and heat it back up gently and slowly. It will be just fine.



When reheating, add a little liquid and cover and bake in oven. This should soften things up a bit. I actually prefer cold leftover spaghetti, mac and cheese etc.!



It hasn't gone wierd, macaroni cheese is supposed to be like that after a day or so.
