following a recipe I have from Giada DeLaurentis heat the over to 450F, cut the zucchini in half lengthwise, and roast for about 15 minutes. If you want to add carrots, make sure they are cut into smaller sections than the zucchini, as they are more dense and take longer to cook.

* 1 teaspoon jarred minced garlic
* 1 teaspoon dried Italian seasoning
* 1/2 teaspoon dry crushed red pepper
