Recipes with onions and/or potatoes?!


Question: Recipes with onions and/or potatoes?
My dad has a habit of buying odd things in bulk. He seems to think we've run out and always buys more. Right now, my kitchen is overflowing with potatoes and onions. What are some recipes that use a lot of these?

I do have some other things like veggies and meat, so recipes can be for side dishes or main dishes. Just something to get them eaten! Thank you!

Egg scramble with potato & onion

This is a quick dinner item, at least it was when I was growing up. I think it would make a good breakfast dish too. You can add more onion, I like to

Ingredients
5 slices hickory-smoked bacon
8 medium potatoes, peeled and sliced
1 large onion, peeled, sliced and separated into rings
6 large eggs, lightly beaten

Method
In a large frying pan, fry the bacon until crispy. Remove from the pan and drain on paper towels. Fry potatoes, and onion rings in bacon fat until brown and done. (Cover pan as needed, but make sure potatoes and onions are stirred frequently to prevent sticking and to ensure browning)

Break the bacon into little pieces. Add to beaten eggs. Pour the egg mixture into the pan and scramble over medium heat until the eggs are set.



How about homity pie?

You need a pastry base for the pie. Then take some potatos and cut into small chunks, take as many onions as you like and cut them up into pieces about the same size as the potato. Lightly saute the potato and onion in a little oil (not too much or the pie will be greasy) with a little garlic. Grate some strong cheese and mix with the potato and onion off the heat, you can add some herbs like fresh thyme or rosemary and season to taste, onion seeds are nice too. Pile the potato, onion and cheese mixture in the pie case and decorate the top with tomato slices. Bake in a preheated oven at about 180 degrees C until golden brown. Lovely with crisp salad or with lightly cooked veg like carrots and broccoli.



Sausage and Potatoes

I use Sausage (like Kielbasa or Smoked Sausages) cut into bite size "circles"

I cut potatoes into fourths or smaller (keeping all the same size though)

Cut up 2 onions about the same size as the potatoes (usually in fourths)

Cut up bell peppers (usually 2 more if I'm in the "veggie" mood..lol)


Now heat your pot (I use a chicken fryer skillet for this) with a little oil, place in potatoes, sausage and cook for a few minutes
Add your onions and bell peppers, seasonings and about 1/4 cup water
Cover your pot and cook til potatoes are soft and sausage is heated through

You can also fry/saute' the onions when making steak or meatloaf and make a gravy with them

Potato Salad
Mashed potatoes
Stuffed/TWICE baked potatoes (bake potatoes, scoop out potato (pulp) leaving skins in tact, add to pulp butter, milk, cheese, green onion, bacon bits, mix well, add back to skins, top with more cheese, bake again til cheese is melted, then eat)

You can cut up the onions as you use them in recipes alot (as in "cubed" or strips and freeze them in baggies so they can be taken from the freezer and just put in the recipe instead of doing it as you are cooking the meal!)

I love this recipe. I always add some garlic powder, and sometimes caramelized onions.

Scalloped Potatoes

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

In a small sauce pan, melt butter and blend in flour. Let sit for a minute. Add all of cold milk, stirring with a whisk. Season with salt and cayenne. Cook sauce on low until smooth and boiling, stirring occasionally with a whisk. Reduce heat and stir in cheese.

Place half of the sliced potatoes in a lightly greased one quart casserole dish. Pour half of cheese sauce over potatoes. Repeat with second layer of potatoes and cheese sauce. Sprinkle the remaining cheese on top. Top with some paprika for color.

Bake uncovered for about 1 hour at 350F.
