Blueberry muffins not rising?!
(Recipe/Directions below)
- 1 1/2 cups* (190g) plain flour
- 1 1/2 eggs, beaten
- 1/2 tbsp baking powder
- 1 cup (225g) caster sugar
- 150g blueberries
- 1/2 cup (125 ml) milk
- 1 tsp vanilla essence/extract
- 65 grams butter, cut to small pieces and melted/softened at room temperature
1. Sift flour, baking powder and sugar together, and mix well.
2. Add in milk, vanilla extract, eggs and butter and stir until just blended (and lumpy). Be careful not to over mix as it will result in a tough texture.
3. Fold in the blueberries into the mixture. Place baking cases in muffin tins. Spoon the mixture into the cases till almost full.
4. Bake for 20 minutes in preheated oven of 200C (400F) or until slightly golden brown. Allow to rest for several minutes before serving.
Answers:
You HAVE to preheat; they don't rise if the oven is heating as the muffins try to cook. Also, baking is a science. If if it says melted, melt it. If it says soften, soften. This "room temperature" clue says NOT to melt it to me.
you HAVE to preheat the oven- this is real important.
Too much butter can definitely do it- it'll weigh down the flour and baking soda and make it too heavy to rise up.
FIx those two things, baking is a simple science, but one thing wrong can make all the difference.
The baking powder is the main ingredient responsible for rising. If you forgot to add it, or used baking soda instead, you will not get much rising at all.

Not enough batter in the mould /cups the recipe sounds okay to me ,make sure to preheat the oven and place the rack in the middle of the oven,don't open the door to peak.
yuo forgot baking powder!! oops! thats the main thing for rising go through the steps slowly to make sure you dont miss anything. :):):):):)
You forgot the yeast! For that recipe you'll need about a tablespoonful of dry yeast
O.K. all of the suggestions have merit ,my thoughts ,if you have washed the blue berries ,make sure they have had time to dry sufficiently , preferably on a dry cloth , yes most definitely preheat your oven ,in order for it to be " solid " it should be on for at least 15 min`s at 200 deg. ,now if your baking powder is old it may have lost its zing ,( baking powder is a mixture of 2 parts cream of tar tare ,and 1 part of bicarb soda ) it is how baking powder is formed ,and it can deteriorate, after a period of time ..the castor sugar is good enough ,the mixture appears to be balanced , but try mixing group 2 together and beat it till smooth , not to froth ,just blended ,then add to group 1 , bring it together , add the fruit ..when the mix is tray-ed up ,allow to recover for 3-5 minutes ,then place in oven , reset the heat to 180 C , it should go well for you , make sure your flour is not to cold
it depends on where you live , is it snowing or hotout side ? etc
