Use wholegrain flour ,or soyflour- actually soyflour is really good- it tastes very nutty. Use walnut or nut flour- these are easy to get at a Korean or Asian market.
Use applesauce for sweetning, the flour, use some oats and nuts, and for the chocolate, use real coco powder- it is bitter, but the applesauce should tame it down, you'll need something creamy to take the edge off- so use coconut milk or soymilk.
Dates are a BRILLIANT way of getting sweet stuff into your cookies.

this one uses date honey, but if you just se dates themselves- simmer them in a pan with a TINY bit of water, you get a sweet paste, it is SO good.

Substitute Splenda cup for cup for the sugar in any recipe. They even have a brown sugar version.
You can also switch shortening (Crisco) for the butter.
