Leftover unopened packaged lasagna?!


Question: Leftover unopened packaged lasagna?
For whatever reason, I have a number of unopened, unused boxes of store bought lasagna. Does anyone know of a recipe for the uncooked lasagna except to make the great traditional dish?

You could make lasagna roll-ups or just break them up and use as noodles in soup or go to some of the websites for the company's that sell them like Barilla and look at their recipes.



You could always go with a white sauce lasagna or go with veggies. Also change it up by going with sausage or beef/sausage mixture. Adding pepperoni is an option too. This is one I make often:

Beef Taco Lasagna


Ingredients:
12 lasagna noodles
1 pound lean ground beef
1 envelope taco seasoning
1 egg
1 carton (15 ounces) ricotta cheese
4 cups (1 pound) shredded cheddar cheese (or Mexican cheese), half cup reserved
2 jars (24 ounces) salsa or picante sauce
1/2 TB chili powder (optional)
1/8 teas ground red cayenne pepper (optional)

Directions:

Preheat oven to 350°.

Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and one jar of salsa or picante sauce. Add chili powder and cayenne pepper if using. In a small bowl, combine the egg and ricotta cheese. Drain noodles.

In a 13-in. x 9-in. x 2-in. baking dish, spoon enough beef to cover. Then add a layer of four noodles, half of the ricotta mixture, half of the beef mixture, half of cheese and repeat. (Reserve half cup of cheese). Then, add noodles and enough salsa or picante sauce to cover. Bake the casserole, uncovered, for 30 minutes or until heated through. Add reserved cheese on top and bake for 10 more minutes. Let stand for 10 minutes before cutting.
