Makes 4 servings

Prep Time: 20 min.

Ingredients:
8 slices dark rye bread
16 teaspoons Russian or Thousand Island dressing
8 ounces corned beef
4 ounces Sauerkraut, well drained
4 ounces Swiss cheese (1 or 2 slices each sandwich)
4 pats butter
Cooking Directions:
1.Spread the dressing on each bread slice.

2.On one slice, place the corned beef, then the sauerkraut, and then the cheese.

3.Place the second slice on the top with the dressing side down.

4.Butter the top of the sandwich and place buttered side down on a preheated griddle.

5.Now butter the other side of the sandwich, which is the top side.

6.Heat the sandwich until bread is golden brown.

7.Turn once and allow the other side to become golden brown.

8.Cut the sandwich in half and serve.

If you have a griddle it is best, but if not use 1 larege pan or 2 medium ones.

Butter one side of two slices of marbled rye bread.
Place in a preheated pan on a medium low heat.
On 1 slice put a slice of swiss or provolone cheese ( Iactually like provolone better) Add a dallop of 1,000 island dressing (home made is best)

In the other skillet or other end of the griddle Place a good sized handful or scoop of saurkrut. The vinegar will evaporiate and will mostly likelt burn your nose a bit so stand back. Flip your pile over.

Get 5-6 slices of corned beef and lay down on the skillet/griddle. Flip and add a good dallop of 1,000 island dressing. Put the kraut on top of the corned beef and add a nother slice of cheese. Cover with a lid and kind of melt the cheese.

Scoop the entire pile and place on the slice fo bread witht eh cheese and dressing, then add the second slice of bread.

Make sure both sode are berowned then cut in 1/2.

This takes a bit to explain but it very simple and quick.



You can grill it or bake it in the oven and then just put the broiler on to melt the cheese (the last few minutes)' when you make it as an open faced sandwich.

I make it with Corned Beef, Swiss Cheese, Saurkraut, on rye bread with some mustard (or sometimes Russian Dressing) and serve it with a slice of a good dill pickle. Grilling like a grilled cheese is easy and quick so that would be my preference.



You can grill the sandwiches or wrap them in foil and put them in the oven for 15 minutes. I usually make mine at home with corned beef, swiss cheese and sweet sauerkraut in my electric fry pan.



yes, except its usually on rye, with pastrami, cole slaw and cheese. maybe russian dressing but if i were making it at home id omit the russian. too saucy.



Jen Himmer has it exactly right for traditional Reubens.Some time I will use whole wheat bread instead of rye or Muenster cheese instead of Swiss.
