How much of a head of cabbage is safe to eat?!

Question: How much of a head of cabbage is safe to eat?
So it's green and leafy on the outside, and gets progressively yellower and harder on the inside. At what point should I stop chopping and throw the rest away? Can you eat the tough yellow/white part inside?

Answers:

I would suggest taking the outer shell out as it has been opposed to nasty stuff - it does grow on the ground. All of the cabbage is edible though. The large leaf in the middle can be used for garnish or wrapping for stuff in - meat.

the core and outside leaves are usually discarded. The leaves may contain pesticides and contamination from handling and shipping and the core is tough.

I would say that you can eat all of it except the bottom core. Steam it, add bell pepper, onion
and carrots a little salt & pepper to taste.

It's all delicious! I like to slice the core very thinly, add a little salt....cook's treat! I think it tastes completely different than the rest of the cabbage. Sometimes I wish the core were larger so I could have more!

It isn't dangerous to eat the center but most people throw the core away because it is tough.

I cut the leaves away as close of the core as possible so they no longer stay held together.

You can eat it all. Put some lime on it, it's yummy
