Well, I was gonna suggest popcorn...light, fairly healthy, blah, blah, blah. But seeing as you don't care what you eat late night then I say just eat whatever you're craving from whatever's on hand!
Sounds like you're looking for more of a "meal" than a snack! Which is great if you're going to be up for a few hours, but can sure make sleep difficult if you go right to bed. Since you mentioned roast beef, gravey and swiss cheese, how about an open-faced roast beef sandwich topped with brown gravey and melted swiss? Some other ideas for a heartier snack might include:
1. Rosemary Potato Bread, sliced and toasted with mayonaise, thick slices of cooked platter bacon, slices of beefsteak tomatos and dill pickles.
2. Pasta salad with ham, cubes of cheese, and peas.
3. Meatball sandwich (you can buy premade meatballs and heat them with spaghetti sauce, then serve them in a hoagie roll with melted cheese.
4. Macaroni and cheese with tuna and peas mixed in. Add some yellow mustard and cream cheese for some extra zing!
Bacon and cheese on a toasted english muffin, broiled.
Peanut butter and sliced banana on toast.
Turkey and pesto and cream cheese spread on flour tortilla and rolled
Scrambled eggs, bacon, cheese, avocado and salsa rolled in tortilla
French fries topped with gravy and sour cream
Nachos
ice-cream, peanut butter and apples, milk and cookies, and like Marjorie said beef jerky, the one that has a man with a mustache
waffles (torn to pieces), scrambled eggs and bacon (torn into pieces as a topping) tossed in a bowl like a breakfast food salad and maple syrup as dressing.
The other night I had pistachios and a delicious ripe peach with a nightcap glass of good spiced rum.
