yes it is very lean and very tender if you cook properly and baking as a roast is best, otherwise it is tuff as is part of the rump section of the cow. many try to broil, pan fry or even grill but is too tuff for anything like that. there is little to no waste on it, but just a tuff piece of meat to cook other than bake.

Yes. You slice it crosswise back and forth on both sides and broil it. Imagine little squares.

Then I suggest serving it with a fake Bernaise sause -- a combination of mayonnaise, vinegar, and black pepper. Which, obviously, would increase the fat content. But it's darn good!
