Crispy baked chicken

Set up:
1/2 cup flour seasoned with a pinch of salt and a pinch of black pepper on a plate

2 large eggs, whisked with some vermouth, vodka, milk or water in a bowl

2 cups panko breadcrumbs with a big pinch of salt, black pepper, Italian seasoning and grated Parmesan on a plate

Method
Heat oven to 375. Drizzle 2 tablespoons of vegetable oil on a baking sheet with sides.

Rinse the chicken with cold water and pat dry. Remove the tenderloin and pound the breasts to an even thickness. Dust lightly with seasoned flour, float in the egg wash, coating completely, then press into the panko breadcrumbs on one side, flip and press the panko into the other side, make sure it is completely coated.

Place the chicken on the baking sheet and then flip over so both sides have some of the oil.

Bake in the hot oven, 18 minutes, flipping half way through the cooking time



Super easy oven baked bbq chicken. You can also use chicken breasts if you don't like thighs.

Begging For More Baked BBQ Chicken

? cup barbecue sauce
? cup plum sauce
1 tbsp freshly squeezed lemon juice
1 tbsp reduced-sodium soy sauce
1 tsp chili powder
? tsp dry mustard powder
12 boneless, skinless chicken thighs (about 2? lbs / 1 kg)

In a small bowl, whisk together barbecue sauce, plum sauce, lemon juice, soy sauce, chili powder and mustard powder. Set aside.

Spray a 9 x 13-inch baking dish with cooking spray. Arrange chicken thighs in a single layer in dish. Pour sauce over top. Turn chicken pieces to coat both sides.

Bake in a 375o F oven, uncovered, for 30 to 35 minutes or until chicken is no longer pink in the CENTRE. Remove from oven.

Drain off all remaining sauce from baking dish into a small saucepan. Skim off any fat (clear liquid) that remains on the sauce surface. Heat the saucepan over medium-high heat. Cook, stirring occasionally, until sauce reduces and slightly thickens to coat the back of a spoon, about 8 to 10 minutes. Spoon sauce over chicken and serve.

Either put stuffing inside or 1/2 lemon (keep a bit of the juice aside). Put in fresh herbs if you have them - thyme works best, or things like rosemary, oregano, sage work well. Each chicken's different.

In a little bowl put lemon juice, butter and the rest is up to you, I like to put in salt and pepper, garlic, chopped herbs, lemon zest etc. Mix it up then push it under the chicken's skin. If you have it, then cover the chicken in some bacon. Put it in a roasting tray, cover with foil and bake on med/high until the chicken is cooked through but pale. You'll have tons of juice, remove foil and baste the chicken. Put back in the oven and keep taking out, basting and putting back in until it's golden brown.

It's best to cook it more than you need to and the basting and butter keep it moist. If you put the lemon in it'll be steamed with a zesty tangy flavour.



I have a whole chicken recipe u can alter 4 peaces of chicken..

Put chicken in oven bag add oranges (or juice) put in cavity, add salt, pepper, thyme, garlic, honey, and little water or broth.
