The store bought stuff I store in my cupboard. The real maple syrup in the fridge.
Maple syrup will mold if you store it at room temp after you open the jar. The water activity is not sufficiently high. The commercial substitutes contain benzoic acid or other antimycotics and can be stored at room temp.
