The best way to cook fried rice:

- moderation, esp. with use of cooking oil. If too much oil is used your fried rice becomes very greasy.
- any kind of rice is actually good for fried rice. Jasmine will do -- and I agree with one of the posters saying that pre-cooked rice that has been refrigerated overnight will make better fried rice.
- use combination of fresh and processed ingredients, e.g., onion, garlic, eggs, chili flakes, green peas, chicken/sausages.
- use sweet soy sauce, instead of regular. Sweet soy sauce has a thicker body than regular soy sauce, almost like molasses. But it gives the best flavor to the fried rice.

I like using jasmine rice... I just like the texture of thin rice.

1. Cook the rice beforehand and have it ready
2. Beat an egg or 2 and fry it in a pan then scramble it up (Med heat)
3. Cut some meat (chinese sausage, chicken, spam, ham, or hotdog) into small cubes, add it to the mix
4. If you want to add chopped green onion, onion, corn or other veggies add that in too
5. Mix it around for a couple minutes
6. Add the rice in and mix it. Add a bunch of soy sauce and sesame oil to your taste 5-8 min

And there you have it! You can eat it with some Siracha sauce too for a spicy kick

Tradition and authenticity would call for Jasmine rice but I have found that Uncle Ben's converted is great because the grains are firm and stay separate. Whatever rice you use it should be made the day before and refrigerated overnight for the best results.
