Fill a medium saucepan with a couple inches of water and bring to a simmer over medium heat. Set a bowl of chocolate over the water to melt or you can use a double boiler. Stir until smooth. (Alternatively, melt the chocolate in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)

Once the chocolate is melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Holding the strawberry by the stem, dip the fruit into the chocolate, lift and twist slightly. Set strawberries on the parchment paper in the fridge for about 30 min.

You can melt white chocolate as well & with a fork drizzle the white chocolate over the dipped strawberries.

Some other tips:

Don't work with wet strawberries, make sure your strawberries are dried well before your start dipping

For best results, make sure strawberries are at room temperature before starting.

When dipping strawberries, “swirl” them while they are submerged in the melted chocolate so they get covered really well.

Allow the excess chocolate to drip back into the pot before placing them on the parchment paper.

If chocolate gets too thick while you’re still dipping strawberries, gently reheat to thin.

For an extra twist, you can embellish the strawberries by sprinkling finely crushed nuts or candies over the just-dipped strawberries.

Carefully remove the chilled chocolate covered strawberries from the baking sheet with a flat knife if necessary.



Put chocolate chips and 1 tablespoon of shortning--don't substitute-- in the microwave. Microwave 30 seconds at a time until they are melted. If it is not liquid enough for dipping add a bit more shortning. Dip your strawberries, put on a wax paper lined cookie sheet and refrigerate until the chocolate hardens. I use this for all dipping of cookies or fruit



Buy your favorite chocolate candy. Boil a little water in a pot ( about 2-3 in) and place a bowl over the pot and place your chocolate in the bowl. STIR! This way you can melt the chocolate w/ out burning it.

MAKE TUXEDO STRAWBERRIES! This takes both white and milk (or dark) chocolate. Cover one side with white and let dry. Sideways dip in milk chocolate to make a "V" in front of the white part. Ten make buttons (dots) and a bow. I think i saw this last year on foodnetwork.com
