Question: Can you refrigerate raw uncooked cheesecake mix?
for a cheescake that needs to be baked due to raw egg and if so for how long.
i made way too much

I wouldn't hold it for more than a few days.

You could also bake it off now and freeze it for later. Here is a link to the process I've used. The article cites 1 month as the maximum time frame, however, I've found the cheesecake still retains its taste and texture 6 weeks later, if wrapped properly.

It is the beaten egg white which makes the cheesecake light and airy, so it may freeze but will not be so nice when baked from or after being frozen. I would personally just put the surplus into a suitable ovenproof tin or similar and cook/bake it together with your other cheesecake. You can then refrigerate or even freeze it and use at a later date. A baked cheese cake does not necessarily need a pastry base. It tastes pretty good on its own, especially if served with stewed or tinned fruit. Good luck!
