Sure you can, just melt the butter for the topping, if your speaking of the cake portion then it is yes again, for the topping you can caramelize it with some butter and a bit of pineapple juice from the fruit, add it to the pan put your pineapple slices in and the cherries, spread over the cake, bake, let it rest for 5-10 minutes before flipping it over and taking off the pan.
I always use granulated and the cake has always been eaten without complaints.
Castor sugar IS Granulated sugar. They are just called different things on both sides of the pond. Enjoy!
