The best way is to let it cool down, then use a funnel and cheese cloth to filter it back into the original container. You can use oil about a dozen times before it needs to be replaced. If the oil is getting a ishy smell, try throwing a potato in there at highest temparature for 5- 10 minutes, it will absorb the stank.



You filter it be running it through a very fine sieve and then several times through several layers of cheesecloth. Cooking oil can be used many times over. You will have better luck with older filtered oil if you start with the best quality oil you can afford.



Once you've used it for cooking anything in it, filter is as directed above, and store it in the refrigerator. Bacteria can grow on it even though the temp was high when you cooked with it.
