need 4 eggs only have 3?!


Question: Need 4 eggs only have 3?
im was going to make whats called "poor mans pecan pie" (basically a pecan pie with oats instead of pecans) and realized the recipe calls for 4 eggs and i only have 3.
will it be ok with 3 or can i make a sub for the 4th egg?

Just use 3/4 of all the other ingredients.



You can subsitute 1 tbps ground flaxseed in a little bit of water (2-3 tbsp) if you have it.
Other options are 1/4 cup canned pumpkin (will add fibre to your dish!), a mashed banana, 2 tbsp cornstarch, tapicoca or potato starch. Also can use 1 tbsp oil + 2 tsp baking soda + 2 tbsp water.

As I'm assuming this is for the filling, the pumpkin or banana will work out nicely and will make the filling a little more rich, dense and tasty. They don't change the taste as much as you'd think.

About 1/4 cup water with 1/4 tsp baking soda will make up the liquid difference and add the rising element which the missing egg would provide. Just add the water and soda to the eggs before you beat them. Hope this helps. This sounds like a good recipe. If it turns out well will you share it?



What size are your eggs? If the recipe doesn't call for a specific size egg usually it implies a medium size egg. If you are using large or extra large you'll be okay. Or substitute with a little apple sauce.



use the three leavening of eggs vary according to size and age and temperature , you could get more loft by separating , whipping whites and reincorporating with yolks



are the eggs rather large? if so you should be ok! Eggs come in lots of different sizes. If they are jumbo, you are good to go.



You can use 1/4 cup of apple sauce instead.



Why not just buy more eggs?

How about cutting all the rest of the ingredients by 25%?...



If they are large eggs then 3 should do the same job as 4 small ones.
