1.Preheat the oven to 200°C, gas mark 6. Place the oil in a roasting tin and heat in the oven. Meanwhile, peel the parsnips and cut - depending on their size - lengthways in half or quarters to form even-sized pieces.
2.Carefully place the parsnips into the hot oil, and turn to coat. Roast for 40-45 minutes, until golden, turning halfway through.



Parsnips can be cooked like any root vegetable. Boiled, steamed, roasted. Cooking time will depend on the method used, how small you cut them up, etc. etc.

I like to cut them in 1-2" chunks and boil with carrots and/or potatoes, and then mash the whole mess up with lots of butter and cream.



Timing depends on size & method; treat them the same as carrots.



In the oven or where,mash maybe.
