Question: How do I cook ground caribou? I was given some and thought I'd make caribou hamburgers. Would this work?
Does it have to be cooked as much as regular ground beef? Can I make them just with the caribou or should it be mixed with other ground meat?

generally wild meat like that is pretty lean and might benefit from a little ground pork but thats up to you. You can use it in what ever you would use ground beef. There should be now special cooking methods involved at all. Make sure it is well done, of course.

can be cooked as is, but you need to add shortening to the meat 1 part shortening to 3 parts meat and some chopped diced onion to the mix to keep it from sticking and remove the gamey taste of the meat, cook slowly and enjoy as any other beef type meat



I would treat it just like ground beef. Just be sure to brown it BEFORE using it in anything. That way you can monitor the fat content.

I can't vouch for them, but there are a lot of recipes here, including a burger recipe. Looks like they suggest adding some pork fat because Caribou is so lean:

The meat is really lean so plain burgers would probably be dry - I would mix with higher fat meat (beef or pork) to ensure it stays moist.
