Question: A "chopped" style challenge for you?
Try to get rid of the most ingredients (my leftovers and misc. things around my kitchen) in one day's worth of meals.

Bacon
2 cans of chilli
1 white onion
1/2 tomato
2 cans corn
1 box of cornbread
1/2 container of dipping caramel
5 limes
5 bananas
cream cheese
mixed "veggie lovers" salad
frozen hash browns


Assume that I have basics such as eggs, milk, flour, spices, sugar, etc...
That's pretty much all the stuff that's been lingering around. Thanks!

Answers:

Breakfast: banana pancakes with caramel in place of syrup & all but 2 bacon slices

Lunch: hash brown and egg "nests" - press defrosted hash browns into muffin tins, and add a cracked egg whole or scrambled) & top with 1 T shredded cheese. Bake at 325 until the egg is cooked through. Remove from muffin tins and serve with homemade corn and tomato salsa & fresh salad (can also make a vinaigrette with oil and lime).

Dinner: crock pot chili using 2 slices of the bacon, both cans of chili and onion. If you have extra canned tomatoes, that would be great, too. Cook bacon crisp, saute onion until slightly browned. Deglaze pan with 1/2 c of water or beef broth. Pour everything into the crock pot. Adjust seasonings to taste. Prepare corn bread mix with a can of corn for extra flavor.

Dessert - lime cheesecake



The obvious a Tamale Pie (lots of recipes here and online).

Bump up your canned chili with bacon and onions, tomatoes and corn first. Topped with the cornbread mixture and bake. Yum. Chili dishes taste very good with lime squeezed over them.

Have a salad on the side.

Leave the hash browns for a sunday breakfast. And don't worry about the bananas and cream cheese.



Squeeze the limes and mix the juice with some sugar then dilute with water and ice for a fresh lime-ade.
Make banana bread with the bananas and top with a frosting of the cream cheese flavored with the caramel dipping sauce.
All to go with you tamale pie.:)
