I have the GT Xpress 101 and found Pigs in the Blanket in the cook book. I also found this on their web-site:

Xpress Cooker Breakfast Pigs-in-a-Blanket

?8 brown ‘n serve sausages or any sausage you prefer
?1 package (6 ounces) complete pancake mix
?1 cup water

1. Place sausages in each well of xpress cooker divider pan.
2. Cook 2 to 3 minutes.
3. Mix batter and water in bowl or shaker. Place 1/4 cup batter in each well over sausages.
4. Cook 7 minutes. Serve warm with butter and syrup. Serves 4.

or this one:

Apple Sausage Pancakes

Serving Size: 2

4 brown and serve sausage links

2/3 cup baking mix, like Bisquick

1/3 cup milk

1 egg

1/4 cup finely chopped apple

maple syrup

Spray wells of GT Xpress with non-stick cooking spray. Place 2 sausages in each well, plug in and preheat. Mix all other ingredients except maple syrup in shaker. When heated, pour half of batter in each well over sausage, close cover and cook 8 minutes, until pancake is puffed and done. Serve with maple syrup.

or:

GT EXPRESS 101 TREASURE PANCAKES

complete pancake mix
any one of your favorite pie fillings
whipped cream (optional, for serving)

Make some complete pancake mix according to package.

Fill each side of the GT Express with pancake mix and let it set 30 seconds.

Place 1 tablespoon of pie filling in the center of each pancake close lid and cook for 10 minutes.

Remove from GT Express and top with whipped cream

Ymmmmmmm!

These also freeze very nice and just heat in the micrwave or in the toaster over they are great

You should be able to make plain pancakes or add anything you want, like pecans, walnuts or bacon. I would experiment and have fun! :D
