Question: I need an awesome Fluffy Vanilla Icing recipe?
i am making my old teacher some cupcakes, and i need a recipe for fluffy vanilla icing recipe. i need to be able to pipe it without it puddling or anything like that. And it cant have any wheat in it what so ever. PLEASE I NEED THIS!!!!!

Fluffy White Frosting.................

2 large egg whites
1 cup sugar
1/4 teaspoon cream of tartar
1/3 cup water
1/8 teaspoon salt
1 teaspoon vanilla extract

Place the 2 egg whites in a large mixing bowl or the bowl of your stand mixer. Beat until the egg whites are foamy and thick; they should mound in the bowl, without holding a peak. Set them aside while you prepare the sugar syrup....

Combine the sugar, cream of tartar, water, and salt in a saucepan. Bring to a boil, stirring frequently; the sugar should be dissolved. If the sugar hasn't dissolved, cook and stir a bit more, until it has. ...

Begin to beat the egg whites, and immediately pour the boiling sugar syrup into the egg whites in a slow stream, beating all the while. As you beat, the mixture will thicken.

Once all the syrup is added, stir in the vanilla, and continue to beat till the frosting is thick and will hold a peak...

Try Seven Minute Frosting

Ingredients

* 2 cups white sugar
* 3 egg whites
* 3 tablespoons light corn syrup
* 3 tablespoons cold water
* 1 teaspoon vanilla extract

Directions

1. In the top of a double boiler, combine the sugar, egg whites, corn syrup, water and vanilla. Place over boiling water and beat with an electric mixer on high speed for 7 minutes, or until frosting forms peaks when beaters are raised. Remove from heat. Use immediately to frost a cooled cake.

OR the similar Italian Meringue Frosting

2/3 cup sugar
1/2 cup water
3 egg whites (room temperature)
1/8 teaspoon cream of tartar
1 teaspoon vanilla or other flavoring
2 tablespoons sugar

# Mix 2/3 cup sugar and water together and bring to a boil until a temperature of 275 is reached on a candy thermometer.
# Brush the crystals on the side of the pan down with a pastry brush dipped in cold water as needed.
# As the syrup reaches its temperature, beat the egg whites with the cream of tartar, 2 tablespoons sugar until the whites form soft peaks.
# Remove syrup from heat add the syrup in a small stream while continuing to beat the mixture with the electric mixer.
# Beat about 3 more minutes. The mixture will form glossy peaks and thicken.
# Add the vanilla and mix a bit more.
# Frost the cake immediately.
