First, I hope you are using a springform pan, this way you can remove the sides without any problems
Second, be sure to use parchment paper. Cut a circle for the bottom and a long strip for the sides.
Third, It wouldn't hurt to freeze the bottom a bit before adding the ice cream, this will help to keep it from shifting when adding and spreading the ice cream.
Freeze over night.
When ready to serve, remove the sides of the springform pan and peel away the parchment paper...the cutting with a hot knife trick is a good one
Note...if you are not using a springform pan, be sure to cut the parchment paper larger than the pan is.
Go one way in a square pan over the bottom and up the sides, leaving extra over the edges, do the same for the other direction. The extra over the sides will act as handles to help remove the ice cream cake
No and you don't need a spring form pan either...just let the ice cream soften so you can spread it over the crust...then freeze overnight..
