How to better do lactose free?!


Question: How to better do lactose free?
My daughter has been put on a lactose free diet. She loves my homemade cream of broccoli soup. Does anyone have an idea on how I can make the texture creamy without using milk or cream? My first attempt using rice milk and soft tofu pureed together was ok but lacked richness.

Saute onions, add carrots, cauliflower, broccoli stems then chicken broth and spices you like. When the veggies are soft, puree. Add in chopped broccoli tops and cook another few minutes. The pureed cauliflower really works well to add a creamy texture to the soup.



I am allergic to milk so I am not sure about the lactose content, but I subsitute anything that requires milk with soy milk, the richest soy milk I have found is prosobee baby milk it comes in a blue can. Hope this helps!



how about lactaid milk...or smart balance lactose free milk?
