Can I use Pastry Flour in my sticky buns?!


Question: Can I use Pastry Flour in my sticky buns?
all of the sticky bun (a.k.a. cinnamon roll) recipes I have read are derived from regular bread recipes. So, can I use cake/pastry flour instead of bread/AP flour?

No, you really can't.
Recipes that are yeast-based, like sticky buns, need the gluten that is present in all-purpose flour (or even better, bread flour).
Pastry flour is specially made to contain less gluten, which is better for pastry. But if you don't have enough gluten then your yeast-based recipe won't work properly.



Yes I have made them with cake flour and it worked out fine. I sifted the flour.
