Question: How to make a portobello sandwich without soaking the bread in olive oil?
Whenever I broil portobello mushrooms drizzled in olive oil, I can never get the mushrooms into the sandwich neatly. The whole thing becomes an oily mess and I can't even pick it up with my hands.

Mushrooms release a lot of water from their cells when you cook them. The only way to avoid it it to cook all the juice right out of them. You can use less oil, but they will be messy no matter what. Try blotting them on paper towels before putting them in the sandwich.



Don't fry the bread, toast it and grill the mushroom whole, gill side up first and for perhaps a minute turn and allow the oil in the gills drain a little

Us only a little oil with the mushrooms as they are like sponges.



Try brushing them with olive oil or an olive oil spray instead of a drizzle. You will get better control.

Also the mushrooms are juicy without any oil so this is what could be dripping on you.
