Question: If you cooked rice & you cooked chicken, what are some options to put on top so that you don't...?
eat a dry meal, BUT at the same time aren't fattening/unhealthy?

Soy sauce with green onion, lemon juice and red pepper.



1 cup Rice
1 can Condensed cream of chicken soup (10 3/4 oz)
1/3 cup Dry sherry or chicken broth
3/4 cup Water
1 Package frozen vegetables (16 oz)
4 Skinless, boneless chicken breast halves
8 Drops Worcestershire sauce
Paprika

In a large skillet, combine the rice, soup, sherry, water, and frozen vegetables; mix well.
Heat to boiling, stirring.
Remove from the heat.
Arrange the chicken breasts on top of the rice mixture. Sprinkle each chicken with a couple drops of Worcestershire sauce. Spread with the back of a spoon.and Sprinkle with paprika.
Heat to boiling, reduce heat to medium, cover, and simmer for 15 minutes.
Remove cover and stir the rice around and under the chicken.
Reduce the heat to low. Continue cooking, covered, an additional 15 to 20 minutes, or until the rice is tender...

here in the middle east we use loads of yogurt sauces..

#1.. 1 cup of plain (low fat if you like) yogurt
1/2 cup finely chopped cucumber
1/4 cup of seeded finely chopped tomato
1 tsp dried mint (or a little diced fresh mint)
1 Tablespoon finely minced onion
juice from half lemon
salt and black pepper..
mix well and serve dollops on top of rice..

#2 recipe..Mint/Couriander Raita
2 cups of yogurt
1/2 cup of minced coriander
1/2 cup of minced mint
1/2 tsp ground cayenne pepper
1/2 tsp of powdered ginger or small knob of fresh ginger finely minced
1/2 tsp of ground cumin
1/4 tsp of sugar
1/2 tsp black pepper
1 tsp salt
juice of half lemon
blend together all in blender till leaves are blended well.. this will look green.. if you like it spicy, you can add 1 small hot chili into the blender..

this is more runnier than the 1st recipe, but tastes wonderful on top of rice..



YOu can make a simple pan sauce with chicken stock, shallots, a little white wine and some fresh thyme. Simmer this for a while until it reduces down, take it off the heat and stir in a tablespoon of cold butter. You could also add a teaspoon of prepared mustard or a drizzle of lemon juice.



You don't make your rice or chicken too dry when you cook them.

Both should be moist, but not soggy.

I use a little soy sauce, more for flavouring rather than adding moisture. Add a couple of poached eggs so the yolks will add some flavour to some of the rice.



Gravy lol. That's pure fat.

Mix ingredients:
Salt and freshly ground black pepper
1 lemon, juice and zest
1 teaspoon dried oregano
2 tablespoons balsamic vinegar
1 teaspoon chili powder



A good little "salad" I make is diced tomato and canned corn with a little bit of olive oil. It's really good and moist so your meal won't be as dry.



This sounds weird but you could do salsa.
Soy sauce like someone said is a nice option too.
Curry would be great, if you have coconut milk and curry powder u could find a recipe online.



green salad is always good with dressing ( 1tbs of olive oil, 2/3 tbs balsamic, dash of salt and pepper, dash of mustard and 1 tbs of milk )
