How do I cook lamb leg pieces?!


Question: How do I cook lamb leg pieces?
I already have a recipe but when I went to the butcher, I asked him to cut the leg into one to two inch thick pieces since the lamb wasn't boneless, like the recipe called for.

I plan on either braising it in a pan first and transferring it to the oven for an hour, then see how I'm doing.

I was just wondering if there is a certain way that would guarantee tenderness. This is a valentines dinner and both me and my significant other prefer medium cooked meats.

i always cook my leg of lamb whole, whether boneless of bone in, so I don't know how well this will work in your case,''I always take several cloves of garlic and cut it into slivers. Then I take a knife, poke holes in the meat and stuff slivers of garlic in the holes. Then I rub it generously with olive oil and sprinkle with rosemary. The i roast it in a 350* F oven until done,

FWIW, I don't go in for rare meat either. i always cook my leg of lamb to 160*F internal temperature and it is quite tender.
