As a chef for a display of a salmon on a buffet I used unflavoured gelatin with blue food colouring to imitate water rushing under the fish, and dill to mock seaweed, people complained the Jello was tasteless, for a sweet product you can warm up fruit juices, dissolve some sugar in them, add the food colour and soften unflavoured gelatin, then allow it to set, here in Canada we have a Jello brand flavour called Blue Raspberry, it is available on Ebay in some country's.

I have used Hartley's Jams and Jelly's, it would not turn a blue you could be aware of, best to use the recipe I gave as there are no package product you can make and add colour to to make any real shade of blue.

Nothing in culinary is really blue.
Why do you think band aid makes blue bandages for the industry?

You will need to work with coloring.
Blueberry is actually purple.

I stray away from blue coloring cause people have a problem with it, cause it's not natural.

That is a color you need to take in at times, but not all the time.

I'm no "Health" person, I eat what I like, but that color is weird for others.

If you add blue to purple, you will get a darker purple, that is just simple color balance.
You need a more clear base.
I don't know where you have had blue jelly, cause that would take a ton of dye.
You could try and produce it yourself with sugar, water and juice of a fruit with almost no color.

Good luck, if you make a banana or orange jelly that is blue, I want to know the recipe.
Like I said, the color is not natural.

Adding blue coloring to purple jelly would only make it more purple. Add the blue food coloring to a light colored jelly. Maybe some apple jelly or pineapple preserves. Those choices are a bit yellow in color so if you don't add enough blue color you might end up with green.

Good luck!
