What are some cool and different pancake or other breakfast recipes for a Sunday Morning?!

Just finished a week of Rachael Ray on Waffles. She mixed chopped ham & cheese in the waffle batter. Topped regular waffles with a mixture of sauteed apples and raisins with cinnamon & sugar. I am sure you can do the same with pancakes. Top pancakes with raspberry, peach or other preserves or fresh berries or wrap the pancake around a breakfast sausage. Blueberries, chocolate, white chocolate, nuts, raisins or berries can be added to your batter also.
French toast is great. You can make it plain, just soak some sliced white bread, brioche or challah in a beaten egg for a few minutes on each side. Saute in butter and serve with cinnamon sugar or butter and maple syrup. You also make sandwiches: Ham & Cheese, Peanut butter and bacon or banana, Cream Cheese & Jelly, then soak the outside of the bread in egg mixture and fry in some butter until nicely browned.
Frittata-Italian Omlette- Preheat over to 375 degrees. Beat two eggs per person, add leftover ham, cheese, pasta and veggies or anything that would suit an omlette. Heat a tablespoon or two of olive oil in non stick pan until hot. Add omlette mixture and cook on stove top, over medium heat until set. Place in preheated oven and bake until omlette is cooked through. Flip bottom side up onto a plate for serving. Top with grated cheese or a little marinara or other sauce, if desired, and cut in wedges like a pie.

Gingerbread Pancakes
1/4 c. butter , softened
1/2 c. light b. sugar
1/4 c. molasses
2 eggs beaten
1 1/2 c. buttermilk
2 c. flour
3 tsp. b. powder
1 1/2 tsp. cinnamon
1 1/2 tsp. ground ginger
1/2 tsp. nutmeg
Cream together butter , sugar and molasses . Add eggs and buttermilk . Add the dry ingredients and combine . If a little to thick add small amount of milk to thin . Let batter rest 10 min. before frying .
