Can i substitute cocoa powder for baker's chocolate?!


Question: Can i substitute cocoa powder for baker's chocolate?
my friends and i are going to bake red velvet cupcakes to give out at school for valentine's day tomorrow..
the recipe calls for unsweetened cocoa powder, and i was wondering if i could use bakers chocolate and shred it instead?
what would happen?

Answers:

you can use baker's chocolate instead of ccoa powder, but shredding it won't work. you have to chop it up and melt it, then let it cool slightly and whisk it into your wet ingredients. you'll also need to increase the amount of flour in your recipe- however much cocoa powder is called for, divide it by two and add that much flour (if it calls for 4 tbsp cocoa, add 2 tbsp flour). then add an extra pinch of baking powder or soda, whichever is called for. happy baking!

melt the chocolate instead on top of a double boiler or 2 pots but make sure that no water comes in contact with the chocolate or it will seize up but becoming clumps and that is not good ,and fold it in the batter ,if you use shredded chocolate you will not get the full texture but rather a spot here and there of chocolate.
