What to make for dinner for Valentine's day?!


Question: What to make for dinner for Valentine's day?
We want to keep it simple, easy and cheap, but good of course! He eats meat and I'm a vegetarian. Any ideas of what to make that'll be good and make both of us happy? Thanks!

How about chicken and eggplant parmigiana?

Just buy a package of frozen, southern style breaded chicken breasts, If you can't find breaded eggplant then either bread and fry your own, just slice it and eat it without breading, or use Boca or quorn chicken patties (I used to LOVE quorn before I found out they weren't vegan)
put them in a foil roasting pan (you can get one for a dollar at the dollar store)
cover them with a jar of spaghetti sauce (you can add a hit of red wine and some red pepper flakes if you want to fancy it up a bit)
bake them at 350 for 30 minutes
take them out and cover the top with mozzarella and parmesan cheese
put back in the oven for another 15 to 20 minutes

Serve over your favorite pasta

then just throw away the foil pan when you're done, no mess!

Shrimp Scampi

4 tsp olive oil

1 1/4 pounds med shrimp, peeled (tails left on) and deveined

6-8 garlic cloves, minced

1/2 cup low sodium chicken broth

1/2 cup dry white wine

1/4 cup fresh lemon juice

1/4 cup + 1 T minced parsley

1/4 tsp salt

1/4 tsp freshly ground pepper

4 lemon slices

In a large nonstick skillet, heat the oil. Saute the shrimp until just pink, 2-3 min. Add the garlic and cook stirring constantly, about 30 seconds. With a slotted spoon transfer the shrimp to a platter, keep hot.

In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, the salt and pepper; bring to a boil. Boil, uncovered, until the sauce is reduced by half; spoon over the shrimp. Serve garnished with the lemon slices and sprinkled with the remaining tablespoon of parsley.



MOM'S MEAT, POTATO & GRAVY DISH

1 pound hamburger meat
1 pkg Lipton beefy onion soup mix (sold in boxes of 2)
4 large potatoes
2 pkgs brown gravy mix
9x13 glass dish
foil

Preheat oven to 400 degrees.
In a medium bowl, mix together meat and soup mix. Form into small patties,(makes about 6). Cook on both sides in skillet over medium-hi heat until well done.

Set Aside. Peel the potatoes, cut into quarters, then slice thin. Should be about 1/4 inch thick. Set aside. Prepare both packets gravy mix as directed.

In the baking pan place the meat patties and potatoes in a thin layer of the pan. Some of the potatoes may cover the meat.

Pour gravy mix over the meat and potatoes.

Cover with foil and bake 45 minutes to an hour, or until potatoes are soft. Be sure to turn the meat patties over at least once white baking.

you cant go wrong with pasta and red wine, try linguine with your favorite mushrooms and chunky tomato sauce or ala vodka sauce, if you both eat fish you can add some shrimp to the pasta and make shrimp alfredo.
