Question: What is the best way to work with fondant?
Im going to be making a wedding cake using fondant, and i want to know tips, tricks and the best way to work with it. :-)

I would DEFINITELY make my own fondant because most of the store bought kinds are disgusting tasting. You will need a mixer and a microwave oven for to make this recipe. You can make many batches, but I would be careful about doubling the recipe because the microwave step already requires a deep bowl.

Here is an easy but great tasting recipe:

16 oz. mini marshmellows
2 lbs. confectioners sugar
4 T. water
shortening for greasing the bowl and dough hooks

Grease the dough hook of your mixer really well with shortening.

Put about 3/4 of the confectioners sugar in the mixer bowl.

Put the marshmellows and water in a large microwave safe bowl. Microwave on high for one minute, until the marshmellows are all melted. The mixture will expand. Stir to incorporate. Add this to the confectioners sugar in the mixing bowl.

Mix on low speed for a few minutes and then check the consistency of the fondant. It will probably still be a little sticky at this point. If it is, add some of the remaining confectioners sugar and mix again for a minute or so. Repeat this step until the fondant is firm and neither dry nor sticky.

Turn out onto a clean, firm work surface and knead by hand just for a minute until there are no flecks of dry powdered sugar remaining.

Wrap in cling wrap and let rest for one hour before using. It can remain like this for several weeks. If you want to make fondant decorations, make them ahead of time so that they can dry -- which can take a couple of weeks depending on the thickness.

This recipe is alot less expensive than buying store bought fondant and tastes fabulous! Do get yourself a fondant smoother tool -- it should only cost a few dollars and can also be used on buttercream frostings. Walmart carries them in the wedding section where the Wilton supplies are located.
