Chicken or fish and vegetables in foil packs.
Take a piece of boneless chicken breast or fish filet of your choice, add your favourite fresh vegetables, salt and pepper, (garlic if you're both going to eat it), your favourite fresh herbs, and a few slices of lemon, a drizzle of olive oil if you like and seal it up in a foil pack and bake it for 15 to 20 minutes in a 350 degree oven. You can do one large pack for both of you but it's better if you do one for each of you.
Serve it with a quick rice pilaf...instead of using two cups of water to one cup of rice, use one cup of chicken broth and one cup of water to one cup of rice, when the rice is done, stir in two teaspoons of butter, some chopped chives or green onion and some slivered almonds and serve it with the foil pack.
Roast Sticky Chicken-Rotisserie Style
Ingredients
* 4 teaspoons salt
* 2 teaspoons paprika
* 1 teaspoon onion powder
* 1 teaspoon dried thyme
* 1 teaspoon white pepper
* 1/2 teaspoon cayenne pepper
* 1/2 teaspoon black pepper
* 1/2 teaspoon garlic powder
* 2 onions, quartered
* 2 (4 pound) whole chickens
Directions
1. In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. Remove and discard giblets from chicken. Rinse chicken cavity, and pat dry with paper towel. Rub each chicken inside and out with spice mixture. Place 1 onion into the cavity of each chicken. Place chickens in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4 to 6 hours.
2. Preheat oven to 250 degrees F (120 degrees C).
3. Place chickens in a roasting pan. Bake uncovered for 5 hours, to a minimum internal temperature of 180 degrees F (85 degrees C). Let the chickens stand for 10 minutes before carving.
Basic Mashed Potatoes
Ingredients
* 2 pounds baking potatoes, peeled and quartered
* 2 tablespoons butter
* 1 cup milk
* salt and pepper to taste
Directions
1. Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.
2. In a small saucepan heat butter and milk over low heat until butter is melted. Using a potato masher or electric beater, slowly blend milk mixture into potatoes until smooth and creamy. Season with salt and pepper to taste.

Creamy carbonara for two
Ingredients:
125 ml reduced-fat evaporated milk
1 egg
30 g parmesan cheese
200 g fettucine pasta
1 rasher bacon, fat trimmed
1/2 red capsicum, diced
1 zucchini, sliced
1 cup mushrooms, sliced
Method:
1. Cook bacon in the frypan on low heat until crisp. Drain all the bacon fat from the pan. Add the bacon back into the pan with evaporated milk. Mix until combined and put aside.
2. Beat the cheese and egg in a bowl.
3. Prepare vegetables.
4. Cook pasta and drain.
5. Add bacon and sauce mixture, together with cheese and eggs and vegetables. Toss over a low heat.
6. Serve pasta into bowls and top with carbonara sauce.
