I need meal ideas that fit these requirements?!


Question: I need meal ideas that fit these requirements?
I go to the gym sometimes during dinner time. my husband needs to prepare dinner for himself, my grandmother who is old and really of no help in the kitchen (she's physically disabled), and my 2 year old.

I need easy meals that be served without him having to fire and then serve them, if you know what I mean. I have been doing a lot in the slow cooker because I can leave that on and he can plate and serve everything quickly. things that would work would also be things that I could prepare ahead of time and then just have him stick it in the oven for 30 minutes and then he can plate it and serve everything. things that do not work...seafood, pasta, and things like...steak or burgers don't work because he has to stand over the stove and manage the food while also managing 2 other individuals.

can anyone think of any ideas? we do lots of soups and stews already and I like to use my slow cooker to cook meat. we like to eat light and like everything. thanks in advance.

Answers:

How about a "burrito bar" - refried beans, black beans, lettuce, tomatoes, onions, cheese, guacamole, salsa. You can pop the beans in the microwave and lay everything else out on the counter. Super easy and healthy too.

I heard Marie Callender's Three Cheese Tortellini is really good, too;-)



I like to make pork stews, especially with latin flavors. I take some lean pork and brown it, add water, garlic, tomatillos, chipotles, cilantro, carrots and onions and some water and let it cook.

I teach at my home so things like this are perfect. I make it in the morning and let it slow cook all day.

I also like to make chili but i cut it with a lot of vegetables to lighten it. I add zucchini, corn, celery, etc, in large amounts. Not authentic but good eatiing!

I have to have a winning crock pot recipe this weekend. I type in crock pot recipes on line and got a ton to choose from.
Lasagna, chick pot pie, beef pot pie, taco casserole,-just heat and eat. Take a day a cook up a storm. Put items in freezer with instructions. You can always pull them out in the morning, place in refrigerator. Make pizzas ahead of time( like papa murphy's) and freeze them.



Cook rice and curry,
Spagetti bolognese,
Lasagne,
Burgers,
and anything they like,put them in takeaway containers, and freeze.

On a Sunday afternoon, take some time to prepare about 3 meals at once and then refrigerate or freeze them. Using some of the same ingredients & cooking methods is also helpful to cut down on shopping/prep/cook time.

Group 1:
(Crockpot)-Stuffed bell peppers (ground beef, cooked rice, whole bell peppers, marinara sauce)
(Oven)-Lasagne (ground beef, marinara sauce, ricotta cheese, no boil lasagne noodles)
(Oven)-Sheppard's pie (Ground beef, (premade or leftover) mashed potatoes, mixed vegetables

Group 2:
(Crockpot)-Beef stew (Stewing meat, mixed veg., baby potatoes, gravy)
(Oven) Baked Ziti-(Boiled up ziti pasta, chicken breast slices, asparagus, alfredo sauce)
(Oven) Stuffed pork chops(Center cut porkchops, apple slices, cornbread stuffing)

Group 3:
(Crockpot)-Chicken dumplings (Diced chicken breast meat, mixed vegetables, chicken broth, Biscuit dumplings)
(Oven) Roast chicken & vegetables (Whole roast chicken, carrot, onion, parsnip wedges, potatoes)
(Oven) Kielbasa & sauerkraut (Polish sausage/Kielbasa on a bed of sauerkraut or braised red cabbage)

try pulled pork sandwiches, add bbq sauce in the crock with a pork roast, a can of sweet peas or green beans can be heated in the microwave, and chips. bbq beef and chicken the same..put on a bun with cheese.

make a meatloaf the night before and just have him put it in the oven when he get's home, wrap potatoes for him to put on the oven rack while the meat loaf cooks, for baked potatoes

ham and beans in the crock pot, and make mash potatoes the night before to reheat.

green beans, whole canned potatoes, and smoke sausage in the crock pot.
