Question: Anyone got a good & simple recipe for Apricot Chicken?
Answers:

What ever chook you like,,,,fillet's or just pieces
1 x can Apricot Nectar
1 pkt French Onion Soup mix

Throw the chook in a casserole or baking dish
Mix the soup with nectar
Pour over chook then cover and cook till done.



Chicken:- Apricot

1? c. Apricot preserves or jam
1 cup Russian dressing
1 Envelope dry onion soup mix
6 Chicken breasts
1 tsp Pepper.
Mix together the preserves, dressing and soup mix.
Place chicken in bottom of slow cooker; pour mixture over chicken.
Cover; cook on High for 1 hour.
Reduce heat to low and continue cooking for 3-4 hours
This could also be done on low heat on the range.

Ingredients
6 skinless, boneless chicken breast halves
1 1/2 (1 ounce) packages dry onion soup mix
1 (10 fluid ounce) bottle Russian-style salad dressing
1 cup apricot preserves

Directions
Preheat oven to 350 degrees F (175 degrees C).
Place the chicken pieces in a 4 quart casserole dish. Mix the soup mix, dressing and jam together, and pour over the chicken.
Cover dish and bake for 1 hour in preheated oven.

I had this last night for dinner.

Pan sear 4 chicken breasts in a skillet. While cooking mix together 4 tbsp apricot preserves, 2 tbsp ornage juice, and 2 tsp honey. When chicken is Almost done pour the pereves mix over the chicken and cook on low until well glazed and chicken is cooked thru.

You could also do this for a whole bird, just use it as a glaze during the last 20 minute sor so, glazing twice.
