Question: Use for leftover marinated artichoke marinade?
I am preparing a recipe tomorrow that uses (drained) marinated artichokes. Is there any recipe/dish I can make that utilizes the marinade or do I simply need to throw it out? (I am a vegetarian).

Add some vinegar to it and make it into salad dressing! Maybe a dab of dijon mustard, some S&P, and you're good to go!



a souffle would be a good use.
Depending on what you have on hand, you should google a recipe for Souffle ... but basically a souffle is ...

this is just an example ...
Separate some eggs ... whip the whites until they are stiff. Save the yolks.
take cooked vegetables - I've used canned asparagus before - spinach would work (really anything will work) etc and cook in a pot with with the artichoke juice and any herbs and spices. Bring the mixture to a simmer Gradually add the egg yolks one at a time, beating like crazy as you add each. Add some cheese ... preferably cheese that melts easily like brie, or camembert or even yellow American cheese. Once it is combined and melted ... you fold it into the stiff egg whites and put in a buttered baking dish ...and bake.

Like I say, you should google an actual recipe. But a souffle is really an easy dish once you understand how it is made and works with just about anything.



Allison, I had to read your question a couple of times, if it's the oil your talking about, you can add red wine vinegar, 1/2 teaspoon of dijon, whisk well and add it to a salad that includes, Kalamatta olives, thinly sliced, fennel as well.



If you mean the oil that comes in the jar of prepared artichokes, you can use it in 3 bean salad or as a salad dressing. If they're water marinated, no, I can't think of anything.
