Question: Looking for help on Jerk Chicken Nachos recipe from Pampered Chef?
I plan on making this for dinner but the only thing is, i dont have most of the pans and such that the book tells me to use. And it doesnt say how the chicken should be cooked. Just says to cut it when it is cooked. Also, do u put the peppers and rub on the nachos before or after youve stuck them in the oven?

I hope this is the recipe you are referring to... http://www.pamperedchef.com/images/publi…

This recipe calls for cooked chicken. You can you use a rotisserie chicken from the suppermarket or fully cooked fozen grilled chicken breast that has been thawed.

combine chicken, cheese and 1 tablespoon of the jerk rub; mix gently Sprinkle chicken mixture evenly over tortilla chips. Bake 5-7 minutes or until cheese is melted.

** the above should be cooked first melting the cheese and then the redbell pepper mixture is added*** Meanwhile, dice bell pepper. Cut lime in half crosswise. Juice half of the lime; add remaining jerk rub and bell pepper and mix well. Snip cilantro. Slice remaining lime cut slices in half using. Spoon bell pepper mixture over nachos; sprinkle evenly with cilantro. If desired, combine sour cream and additional jerk rub in resealable plastic bag; trim corner to allow sour cream to flow through. Pipe sour cream mixture over nachos. Garnish with lime slices.

As far as the pans you can use the following substitutions
Large Round Stone use a Baking or cookie sheet
Classic Batter Bowl use a medium bowl
Small Mix ‘N Scraper use a rubber spatula
Stackable Cooling Rack use a cooling rack or cool on the counter
Santoku Knife any kitchen knife will do
citrus press use anything that will help you juice such as a press or your hand to squeze the lime
Ultimate Mandoline any knife will do

Happy cooking!!

One of our favorite recipes from The Pampered Chef! We have made this so many times at my house, so I have a few tips to share.
If you don't have the PC products, substitute using what you do have. The previous post has some very good suggestions. I use diced, cooked, chicken breasts. It seemed to work better for this recipe, but you can use whatever you like best. I also sprinkle some cheese on top of my chips, then add the remaining rub, then add the chicken mixture, top with peppers, then more cheese and bake.
Since the chicken is already cooked, you are basically melting the cheese. I hope you enjoy:)
