Pesto is made with basil which is a very strong tasting herb and I do not care for it. I have found that if you mix a small amount of pesto into alfredo sauce that it enhances the flavor and the alfredo sauce tones down the sharpness of the basil.
I keep a jar around (it keeps a long time), but when I use it, I am literally only using about a tablespoon and adding it to something else.
Your probobly not making it right. Real pesto should taste strongly of garlic and it is made with parmasean cheese, extra virgin olive oil and pine nuts along with the other ingrediants you should know of. It goes good on things such as fettuchini pasta cooked with a little bit of butter and it is also good to put on chicken. Try it one day by making chixken fettuchini. If you like garlic, you should like pesto.
I love pesto! The first time I made it it tasted really bland too. Turns out I just needed to add more garlic. My favorite way to serve/eat pesto is to make a pasta dish with penne pasta and sun-dried tomatoes. I'm a vegetarian so I add chickpeas for me but chicken for my husband.
Try it on a sandwich. I agree that it can be too much on pasta or pizza, but I like it as a sandwich spread. Tomato, avocado, cheese, and pesto. Delicious.
Pesto is an acquired taste, I don't like it much either, but have tasted some dishes with a slight pesto flavor that are good.
I tried it once years ago and did not care for it. I never tried it again..
I don't like them to that extent.
