Bake them! Put them in a pan, drizzle with olive oil and bake @ 375 for about twenty five- to thirty five minutes. You can add salt & other spices ahead of time as well.

Scrub the skins really well and leave them on. All the nutrition value is in the skin, the rest is just starch and water.
Scrub them really well, and then boil them in their skins. Make sure you check that you don't overcook them, use a very thin metal skewer to check.
