These are simple dishes. :D



I made this last night for supper. It's from my documents so therefore I could not provide a link.

Lo Mein Noodles

ingredients
1 (8-10 ounce) package lo mein noodles
2 tablespoons veg oil
3 teaspoons chopped garlic
1 teaspoon finely diced ginger
1 (8 ounce) bag bean sprouts
1/4 cup low-sodium soy sauce
1/4 finely diced onions
1/4 cup finely julienned carrots
1/4 cup frozen peas
1 teaspoon sugar
1/4 teaspoon kosher salt
1 tablespoon of veg oil


Directions
Cook the noodles according to package directions and set aside.


Heat the canola oil in a large skillet or wok over high heat. Add the garlic and ginger and cook for 30 seconds. Add the soy sauce and scallions, peas, carrots and sprouts and cook for another 3 minutes. Add the noodles and sugar and mix well. Taste and season, if needed. Turn off the heat and the last tablespoon of veg oil and stir. Transfer to platter and serve immediately.

(adding cooked and diced chicken or pork is optional)



Bring water to a boil add pasta of your choice and bring to a second boil. Take off burner and cover pan of pasta with lid and set timer for 15 minutes. Now chop a tomato and butter a slice of bread or two and place buttered side down in a fry pan to brown only on the one side. The pasta is done after 15 now drain water off and pour pasta in a bowl. salt and pepper, garlic add olive oil or butter to taste add some Parmesann cheese add the tomato, sliced mushrooms sliced onion etc. served with the toasted bread.



EASY FETTUCCINE ALFREDO

1 lb. fettuccine noodles
ALFREDO SAUCE:
1/2 c. butter
1 c. heavy cream or milk
1 1/4 c. grated Parmesan cheese
1/4 tsp. salt
Dash pepper

In large kettle, bring 4 quarts water with 1 tablespoon salt to boiling. Add noodles; return to boiling. Boil, uncovered and stirring occasionally, until tender but firm. Drain noodles; keep warm.

To make Alfredo Sauce: Heat butter and cream in medium saucepan until butter is melted. Remove from heat. Add 1 cup Parmesan cheese, salt and pepper. Stir until sauce is blended and fairly smooth.
Add to drained noodles and toss until they are well coated. Sprinkle with remaining Parmesan cheese . Serve at once.



I tried something new tonight. I cooked some angel hair pasta, opened a can of spaghetti sauce, (the chunky kind) and chopped up some spinach. When the sauce was hot, I added the spinach and served it over the spaghetti. Served it with garlic toast and a simple salad on the side. It was delicious, especially if you like spinach. Enjoy.
