Twice-Baked Gouda-Stuffed Potatoes

4 Baking potatoes
Vegetable oil, (optional)
1 1/2 c Shredded Gouda cheese
1/2 c Sour cream
2 tb Butter
2 tb Chopped green onion
1 tb Chopped fresh parsley
2 ts Prepared horseradish (opt.)
Salt & pepper to taste
4 sl Bacon, cooked crisp and
-crumbled
Garnish:minced fresh parsley(opt)

Preheat oven to 425 degrees F. Scrub and dry potatoes. If desired, rub
with a little vegetable oil or vegetable shortening. Prick in several
places with fork. Bake in preheated oven for 1 hour. Reduce oven
temperature to 350 degrees F.
Cut potatoes in half lengthwise and allow to cool long enough to handle.
Hold with a thick potholder or oven mitt and scoop out flesh with bowl of
spoon, being careful to leave shells intact (about 1/4-inch thick). Add 1
cup of the cheese, plus the sour cream, butter, onion, parsley, horseradish
(if using), pepper and salt, to the potato flesh. Mash with potato masher
or beat until smooth in an electric mixer.
Fill potato shells with mixture; sprinkle with remaining cheese. Bake at
350 degrees F for 20 minutes. Sprinkle bacon over potatoes for last few
minutes of baking. Garnish with plenty of minced fresh parsley.



Blarney Grilled Cheese & Chutney Sandwich

Ingredients:

* 6 slices sandwich bread (1/4-in thick)
* 2 tablespoons butter (softened, use more as needed)
* 3 tablespoons Major Grey chutney (flavor of choice)
* 6 ounces sliced cheese (Blarney Castle, gouda or smoked gouda)

Directions:
1. Spread 1 tsp softened butter on ea slice of bread (may use more as needed).
2. Spread 1 tbsp chutney on unbuttered side of half the slices.
3. Top chutney w/2 oz sliced Blarney, gouda or smoked gouda cheese.
4. Place bread slice on top, buttered side out.
5. Over med-low heat, brown in a lrg skillet (turning once or twice) till cheese is melted (1-2 min per side).Yield:3 Sandwiches

BBQ Onion and Smoked Gouda Quesadillas With Pea Shoot Mini Salad

Ingredients:

* 6 tablespoons olive oil, divided
* 1 lb onion, peeled, halved, thinly sliced
* 1/3 cup barbecue sauce
* 2 tablespoons water
* 8 flour tortillas (8-inch diameter)
* 8 ounces smoked gouda cheese, coarsely grated
* cheese (about 2 cups packed)
* 1/3 cup fresh cilantro, chopped
* 2 ounces pea shoots (or pea sprouts)
* 1 teaspoon hot pepper sauce

Directions:

1. Preheat oven to 300°F
2. Heat 3 tablespoons oil in large nonstick skillet over high heat.
3. Add onions and sauté until almost soft, about 5 minutes.
4. Add barbecue sauce and 2 tablespoons water. Stir until onions are evenly coated, about 2 minutes.
5. Place 4 tortillas on work surface. Sprinkle 1/4 of cheese, then 1/4 of cilantro and 1/4 of onions on each tortilla. Top each with second tortilla and press to adhere.
6. Brush skillet with 1 teaspoon oil; heat over medium-high heat. Add 1 quesadilla; cook until cheese is melted, about 2 minutes per side. Place on baking sheet in oven. Repeat with remaining quesadillas.
7. Cut each quesadilla into quarters; arrange 4 quarters on each plate.
8. Toss pea shoots in medium bowl with 5 teaspoons oil, hot sauce, and pinch of salt. Serve salad with quesadillas.Servings:4

Gouda and Dill Mashed Potato Casserole
Ingredients:

* 5 lbs russet potatoes, peeled and cut into chunks
* 1 small white onion, coarsely chopped
* 2 tablespoons butter
* 3/4 cup milk
* 4 ounces gouda cheese, shredded (can use smoked Gouda for a extra kick)
* 8 ounces part-skim ricotta cheese
* 3/4-1 teaspoon dried dill weed, double if using fresh
* 1/2-1 teaspoon salt
* 1/4 teaspoon pepper
* 1/4-1/2 teaspoon garlic powder
* 2 -3 tablespoons butter, melted
* paprika

Directions:

1. Preheat oven to 350°F Lightly grease/spray a 13" x 9" baking dish; set aside.
2. In a large pot, boil potato chunks and chopped onion in salted water until tender. Drain and return to empty pot.
3. Add butter and milk and mash.
4. Add Gouda, ricotta, dill weed, salt, pepper and garlic powder and continue to mash to desired consistency.
5. Pour mashed mixture into the prepared baking dish.
6. Evenly drizzle the melted butter over top.
7. Evenly sprinkle with paprika.
8. Bake at 350°F, uncovered for 25-30 minutes or until just starting to lightly brown.Servings:10

Thin slices with ham or turkey are delicious. I like to eat it while having red wine. Especially smoked gouda. Yum!
